Description

- 1 tablespoon coconut oil or olive oil
- 1 medium onion, chopped
- 2 cloves of minced garlic
- 1 piece of grated fresh ginger (about 2 cm)
- 1 tablespoon of AlfaSpice Organic Turmeric
- 1 teaspoon ground cumin
- 1 teaspoon coriander powder
- 1 can of coconut milk
- 2 cups of mixed vegetables (carrots, sweet potatoes, peas, spinach, etc.)
- Salt and pepper to taste
- Chopped fresh coriander for garnish

Instructions
- Heat the oil in a large pan over medium heat.
- Add the onion and sauté until translucent.
- Add the garlic, ginger, turmeric, cumin and coriander powder. Cook for 1-2 minutes, until the spices are fragrant.
- Add the vegetables and mix well to coat them with the spices.
- Pour in the coconut milk and add salt and pepper to taste.
- Cook over medium-low heat until the vegetables are tender (about 20-25 minutes).
- Serve hot, garnished with fresh coriander and accompanied by brown rice or quinoa.
